Restauranteur Brings Taste of Italy to Former Bayport Pub

 For fans of Italian cuisine who can’t make the transatlantic journey to bella italia, look no further than Rose Bay. Dear Emma is a new pizzeria and wine bar located in the former Bayport Pub.

Paul Adelson, a restauranteur who studied the art of Napoli pizza in Italy, opened the business in June. He moved to the community with his family two months ago to open the business. Prior to this, his family would spend the restaurant industry’s shoulder seasons in Riverport. “The last year’s been a whirlwind of excitement,” he says.

The Naples style pizza served at Dear Emma is made using Italian flour and tomatoes. The cheese is sourced from the Lunenburg Farmers Market, and the vegetables are all local. The herbs are grown in Adelson’s own garden. Adelson also works with sommeliers to source sustainably-grown and delicious wine. The house wines are from Lightfoot Vineyards in Wolfville. 

On the menu, Adelson recommends the No. 2, a classic margherita that “takes you back to Italy for that brief moment.” He also recommends No. 5, a white pizza containing bechamel sauce, fior de latte, and fresh herbs. Adelson assures gluten-free pizza lovers that the business is working on adding a gluten-free alternative to the menu, and for the meantime, they also offer a range of delicious salads with locally sourced ingredients.

Look no further for a delightful late summer evening outing than this new business’s patio (which is dog-friendly). Dear Emma is open Wednesday to Sunday and stays open until 10pm, in case that craving for pizza hits a little later in the evening!
